Chickpeas contain 19.8% protein (up to 30%), 3.4-4.5% fat (up to 7%), 41.2% carbohydrates, 2.7% minerals.
The seeds are eaten in boiled and canned form. In terms of taste, they correspond to peas, but they boil worse. They are also used as raw materials for the production of a coffee substitute. For food purposes, varieties with white seeds are mainly cultivated. Varieties with dark seeds are used for forage purposes.
Stems and leaves contain organic acids (oxalic, malic, etc.), which makes the green and dry mass of chickpea unsuitable for forage purposes, with the exception of sheep feed.
