Lentils is used in the food industry for the manufacture of protein preparations, sausages, canned food, confectionery (some varieties of chocolate, sweets, cookies). The seeds are distinguished by their high taste. They are eaten fresh and canned. The protein content is 24-30%, in terms of digestibility they surpass peas, chickpeas and beans, fats - 1.4%, carbohydrates - 52%, minerals - 3.2%.
Large-seeded forms of lentils are mainly used for food purposes, small-seeded forms for fodder purposes.
For fodder purposes, straw and chaff of lentils are used. The protein content in straw is up to 14-15%, in terms of nutritional value it corresponds to good meadow hay, in chaff - up to 18-20%, which exceeds the grain of oats and rye bran. 1 kg of lentil chaff contains 0.56 feed units. Ground seeds are also used for feed, which are a good concentrated feed for all farm animals.
