Oat grain contains on average 10-13% protein, 40-45% starch, 4.5-6.0% fat. Thanks to this indicator, oats are of nutritional and feed value. Oat grain is an irreplaceable concentrated feed for horses and young animals of other species, poultry. Oats as feed helps to increase egg production and milk production. The nutritional value of 1 kg of oat grain of average quality is taken as 1 feed unit.
It is used to produce cereals, rolled oats, oatmeal, biscuits, coffee. Due to the good digestibility of proteins, fat, starch and vitamins, oat products are important in dietary and baby food. Grain is rich in vitamins (B1, B2) and trace elements (cobalt, zinc, manganese).
Oatmeal due to its high content of calcium and phosphorus surpasses millet and buckwheat in nutritional value. Oat flour is not used for baking due to the poor quality of gluten, but it is used for making cookies.
